Winning Game Day Recipes that are Both Delicious and Healthy

When it comes to sports get-togethers, enthusiasm for the food is often rivaled only by that for the game itself. If you’re hosting a party for a bowl game or other event, put together a winning game plan that features a selection of delicious, healthy foods rather than the typical menu of high-fat, high-calorie foods and beer.

OK, so maybe you'll want to stick with the beer, but there are plenty of nutritious options for the rest of your menu that allow your armchair quarterbacks to satisfy their munchies without fumbling away their health.

Keep your snack options healthy by offering bowls of pretzels instead of potato chips, popcorn instead of candy, and wedges of flatbread with garlic hummus or whole-wheat crackers and this delicious hot spinach dip instead of your usual chips:

Spinach Crock-Pot Dip

Ingredients:

2 cups cooked spinach
2 cups shredded Swiss cheese
1 cup low-fat milk
1 packet Simply Organic Zesty Herb Marinade Mix


Directions:

Mix all ingredients together in a crock-pot. Turn on high until cheese is melted, about 20 minutes, then turn to low.

Vegetarian Tex-Mex Chili

Preparation time: 10 minutes
Cooking time: 35 minutes

Ingredients:

1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
3 3/4 cups Italian-style peeled tomatoes, chopped, with juice reserved
1/2 cup vegetable stock or water
1/4 cup chili powder, more if desired
1 tablespoon cornmeal
2 teaspoons sugar
1 teaspoon ground cumin seed
1/4 teaspoon ground cayenne, more if desired
1/4 teaspoon black pepper
sea salt, to taste
1 16-ounce can black beans, rinsed and drained
10 ounces frozen corn, thawed
1 jalapeño pepper (canned or fresh), seeded and chopped (be sure to wear rubber gloves when handling!)
1/2 cup cilantro, chopped

Directions:

Heat oil in a heavy saucepan over medium heat. Sauté onion and garlic 5 minutes or until softened. Add next 8 ingredients and salt to taste. Increase heat to high and bring to a boil. Immediately reduce heat to medium low and simmer 15 minutes. Add beans and corn and simmer another 20 to 30 minutes, adding additional stock or water if chili becomes too thick. Bring those baked tortilla chips into play for the second half or the second game. Serve alongside a bowl of homemade salsa using this easy-to-prepare recipe:



Instant Salsa

Ingredients:

1 package Simply Organic Spicy Guacamole Dip Mix
3 large, ripe, diced tomatoes (enough for 2 cups)


Directions:

Combine the dip mix with the diced tomatoes and refrigerate for at least two hours before serving. For milder heat, use more tomatoes.

Chocolate Fudge Brownies Recipe

Ingredients:
Cooking spray
14 tbsp butter
½ c. cocoa
1 ¼ c. sugar
3 lg eggs
2 tsp vanilla extract
½ c. flour
salt

Directions:
1. Preheat oven to 350F
2. Cover pan in foil and spray with a non-stick cooking spray
3. Start by chopping up the butter and placing in to a large microwave safe bowl and melt the butter, while butter is melting measure ½ cup coco powder and 1 ¼ c. sugar then add it to the butter when done. Crack 3 eggs in to a smaller bowl along with 3 tsp vanilla extract and whisk them together. Then pour it in to the chocolate mixture and stir. Now add a pinch of salt and ½ c. flour and mix well.
4. pour in to pan and bake for 40 min, when done let sit until completely cooled.

Zesty 10 Minute Chili Recipe

Prep Time: 2 minutes
Cooking Time: 8 minutes
Servings: 4

Ingredients
1/3 lb. lean (90%) ground beef
2 Tbsp. chili powder
1 can (14.5 oz.) Del Monte® Chunky Diced Tomatoes (Zesty Chili Style)
1 can (8 oz.) Del Monte® Tomato Sauce
1 can (15 oz.) kidney beans, drained and rinsed

Directions

  1. Brown meat with chili powder in large skillet; drain
  2. Add tomatoes, sauce and beans
  3. Cook over medium heat for 5 minutes

Tropical Fruit Salad Recipe

BBQ Tomato Beef Dip

Prep Time: 10 minutes
Cook Time: 5 minutes

Ingredients
1 lb. ground beef

1 cup hickory barbecue sauce
1 Tbsp. Dijon mustard

Black Bean Veggie Stew Recipe


Inspired by the famous Brazilian dish, Feijoada, but no meat.

Ingredients:
2 tbsp olive oil
4 cups black beans
2 sweet potatoes
1 chopped onion
¾ cup chopped celery
2 cloves chopped garlic
1 ½ cup vegetable stock
1 red pepper
1 can diced tomatoes
1 shredded carrot

Directions:
Start by pouring the olive oil in to a large saucepan, and add the onions and celery. While the onions and celery soften peel and chop the sweet potatoes and add them in to the pot and add the garlic as well what until softened and add vegetable stock, red peppers and diced tomatoes, and carrots. Now add the black beans and stir let cook for 10-15 min go a head and salt and pepper while you mix.

Fiesta Corn and Black Bean Toss Recipe

Prep Time: 10 minutes
Servings: 4-6

Ingredients
1 can (15 ¼ oz.) Del Monte® Fiesta Corn™, drained
1 can (15 oz.) black beans, rinsed and drained
½ cup green onions, sliced
1 can (14 ½ oz.) Del Monte® Petite Diced Tomatoes with Zesty Jalapenos, drained
2 Tbsp. oil
1/2 Tsp. ground cumin (optional)

Directions

  1. Combine all ingredients in medium bowl
  2. Toss. Garnish with cilantro and serve with squeeze of lime juice, if desired
  3. Serve with warm tortilla chips

Spinach Paratha Recipe

Ingredients:
1 c. flour
½ c. water
¼ tsp salt
2 c. spinach
1 tsp oil
½ tsp cumin seeds
¼ tsp chili flacks
½ tsp salt

Directions:
Mix the salt in to the flour and the water and kneed the dough I should still be soft and let set for ten min. in a sauce pan turn the heat on me high and add the oil and cumin, chili flakes, spinach, and salt and stir for 15 min. now kneed the dough while the stuffing cools. Now break the dough and the stuffing in to equal numbers and roll the dough balls flat and place the stuffing in the middle and close them up. In skillet pour a little oil in and toss on a paratha and cook until brown.

Simple Southwest Fruit Salsa Recipe

Prep Time: 5 minutes
Servings: 6

Ingredients
1 can (15 oz.) Del Monte® Chunky Mixed Fruits or other Del Monte® Canned Fruits, drained
1/2 cup red onion, coarsely chopped
2 Tbsp. fresh cilantro, chopped
1 ½ Tbsp. fresh lime juice
1 Tsp. (fresh or canned) seeded and chopped jalapeño pepper, to taste

Directions

  1. Combine all ingredients in a bowl. Let stand at room temperature at least 15 minutes, or refrigerate up to 6 hours before serving
  2. Serve with tortilla chips or as an accompaniment to grilled chicken, fish, steaks, pork or lamb chops

Ingredients

2 (6-7-inch) flour tortillas
½ cup taco flavored cheese, shredded

  4. Remove and cut into 4 quarters

Pear-Gorgonzola Tart Recipe

4 Servings
Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients:
6 tablespoons unsalted butter
2 cups granola
2 bartlett pears
8 ounces cream cheese, at room temperature
1/4 cup heavy cream
1 tablespoon chopped chives
Salt and pepper
3 ounces gorgonzola cheese, crumbled

Directions:

  1. Preheat the oven to 350oF. In a small bowl, melt 4 tablespoons butter in the microwave. Using a food processor, grind the granola into fine crumbs. Add the melted butter and process until the mixture has the consistency of wet sand. Press evenly over the bottom and ½ inch up the sides of a 91/2-inch tart pan. Bake until dry, 10 to 15 minutes. Let cool completely.
  2. Meanwhile, peel and core the pears and cut lengthwise into wedges. In a medium skillet, melt the remaining 2 tablespoons butter over medium heat. Add the pears and cook, turning occasionally, until golden and barely tender, 8 to 10 minutes. Let cool.
  3. In a medium bowl, whisk the cream cheese with the cream. Add 2 teaspoons chives and season with salt and pepper. Spoon the mixture into the crust and spread evenly.
  4. Sprinkle the gorgonzola on top. Fan the pear slices over the cheese in a circular pattern.
  5. Garnish with the remaining 1 teaspoon chives. Serve at room temperature.

Honey Granola Brittle Recipe

Makes 24 Candies
Prep Time: 25 minutes (plus cooling)
Cook Time: 10 minutes

Ingredients:
1 cup sugar
1/3 cup honey
1 tablespoon butter
2 cups granola

Directions:

  1. Line a large baking sheet with parchment paper and grease the paper. In a small, heavy saucepan, combine the sugar and honey over medium-high heat. Stir the mixture until just melted; bring to a boil. Insert a candy thermometer and cook until the mixture is caramel colored and the temperature registers 300oF.
  2. Remove the saucepan from the heat and stir in the butter until melted. Stir in the granola and pour the mixture on the prepared baking sheet, spreading into a ¼-inch-thick rectangle. Let cool for 20 minutes.
  3. Cut the brittle into ½-by2-inch pieces. Let cool completely. Wrap each piece in a 3-by-4-inch piece on cellophane.

Granola French Toast Recipe

4 Servings
Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients:
1/2 Cup seedless raspberry jam
1 Cup fresh or frozen raspberries
3 Cups granola
4 Large eggs
2 Cups milk
8 1-inch thick slices challah bread
5 tablespoons unsalted butter

Directions:

  1. In a small saucepan, heat the jam and ¼ cup water over medium heat. Stir in the raspberries and remove from heat.
  2. Using a food processor, grind the granola into fine crumbs; transfer to a wide, shallow bowl. In a medium bowl, beat the eggs and milk. Add the bread and soak until saturated.
  3. In batches, transfer the bread to the granola crumbs, heavily coating each slice.
  4. In a large, heavy skillet, melt 2 ½ tablespoons butter over medium heat. Working in batches, add the granola-coated bread and cook, turning occasionally, until golden, about 6 minutes per side. Repeat with the remaining butter and bread slices. Serve warm with the raspberry sauce.

Lamb Loin with Parsley Sauce Recipe


Easy everyday dinner with a wonderful sauce.

Ingredients:
Lamb loin
7 cloves of chopped garlic
½ cup fresh parsley chopped
3 tbsp extra virgin olive oil

Directions:
Marinate lamb loin with olive oil, chopped garlic and oregano and let set. For the sauce take the garlic, the parsley and the olive oil and in the same bowl add the lemon juice and black pepper, then puree. Now back to the loin on a skillet sire both sides of the lamb before you put it in the oven. The oven should be set at 425 degrees and needs to cook for 40 min for med rare. When done pour the sauce on the lamb loin and enjoy

Baked Chicken Breasts with Spinach, Pears and Rogue Creamery Recipe


The flavor combination of pears and blue cheese brings a seasonal element to an otherwise simple chicken dish. Great for a dinner party!

Ingredients:
Parsley
2 Pears
1 tbls olive oil
½ cup sliced red onions
4-6 cups spinach
Chicken breast
2 tbls of apple cider vinegar

Directions:
Start by chopping some parsley along with peeling and coring a pear.
Pour the olive oil in to a pan and place the chicken in 3 min to each side until brown, then place pan in oven at 375 degrees for 15 min. while chicken is cooking with a different pan pour a little more olive oil in and cook the onions. (you don’t want to brown them) then add spinach and stir for a few seconds. Add another tbls of olive oil and 2 tbls of apple cider vinegar then add the pears along with the parsley. Once chicken is done enjoy.

Aloo Paratha (Potato Stuffed Flatbread)


Aloo Parathas (Parantha) are a staple dish in many Indian households. Warm flatbread stuffed with a spicy potato mixture, Aloo Parathas can be enjoyed with yogurt, pickle or with any curry. The chapatti and vegetable "all in one" design of Aloo Parathas make them a great meal on the go all by themselves. Try this simple and healthy recipe!

Ingredients:
1 ½ cups whole-wheat flour
¼ tsp salt
3 tsp oil
½ cup water
2 large potatoes
½ small onion
5 springs cilantro
½ tsp salt
1 tsp chaat masala
¼ tsp red chili powder

Directions:
Start by gating the potatoes in to a large bowel then add onions, chaat masala, salt, red chili powder and cilantro and mix it all together. Then take dough and roll it in to small balls, then do the same with the potato mix keep the numbers the same. Set stove to med high and spray cooking pan . roll out a dough ball so its flat and place a ball of potato mix in the center and cover it with the dough and then roll it smooth then place on cooking pan when hot and cook until light brown.

Easy Super Bowl Snacks from the Microwave

1 package (8 oz. cream cheese)

1 can (16 oz.) refried beans

1/2 cup chunky style salsa

1 cup (4 oz.) shredded Mexican cheese blend

Additional toppings such as chopped tomatoes, sliced black olives or sliced green onions (optional)

Tortilla chips


Directions:

1. Place cream cheese on microwave-safe dish. Microwave on high 30 to 40 seconds or until softened. Spread cream cheese evenly in 1-quart microwave-safe casserole. In medium bowl combine refried beans, salsa, chilies and taco seasoning. Spread bean mixture over cream cheese; sprinkle with cheese.

2. Microwave on high 2-1/2 to 3 minutes or until cheese is melted. Sprinkle with toppings over dip, if desired. Serve with tortilla chips.

Makes 8 servings

Microwave tip: You can soften cream cheese using the Soften/Melt feature when using the microwave. Place cream cheese on microwave-safe dish.

Ham and Parmesan Rolls Recipe


Freshly grated parmesan cheese and dice ham give these easy dinner rolls a delicious kick for a variety of occasions.

Ingredients:
10-12 Rolls
Parmesan cheese
Ham

Directions:
Take the rolls and cut them in to the ham and cheese mix then stir and kneed. Spray a cookie sheet and roll the mixture in to balls and let rise. Then bake at 350 degrees for 15-20 min.

Chicken Broccoli Pasta Recipe

Ingredients:
Broccoli
Sun dried tomatoes
Basil
Roasted garlic
Salt and pepper

Directions:
Start by cleaning the chicken of fat and cutting the broccoli and removing the basil from the steam and slice. Add garlic pepper and salt to the chicken and mix well. Then suttee the chicken in to groups. Next suttee the garlic and sun dried tomatoes then ad the chicken and pasta and mix well. Add salt and pepper along with the basil and parmesan cheese.

Jelly Roll Recipe

1½ cups warm water

Pour the water and just whites in to a large bowl and whisk. Once peaks start to show gradually add sugar. Preheat oven to 375 degrees. Then add rest of the ingredients to the previous mix. and fold it in. pour on cookie sheet evenly and bake for 20 min once cool add jelly or what ever you want.

Beef Barley Soup

Prep: 20 minutes
Makes: 4 servings
Cook: 40 minutes

Ingredients:

2 cups water
1/4 cup uncooked pearl barley
1 pound boneless beef sirloin steak or top round steak, cut into 1-inch cubes
6 ounces mushrooms, sliced (about 2 cups)
1 clove garlic, minced
4 cups Swanson Beef Broth (regular, 50 Percent Less Sodium or Certified Organic)
1/4 teaspoon dried thyme leaves, crushed
Generous dash ground black pepper
2 medium carrots, sliced (about 1 cup)

Directions:

1. Heat the water in a 2-quart saucepan over medium-high heat to a boil. Add the barley. Reduce the heat to medium-low. Cover and cook for 40 minutes or until the barley is tender, stirring occasionally. Drain.

2. Cook the beef in a 3-quart nonstick saucepot until it's well browned, stirring often.

3. Add the mushrooms and garlic and cook until the mushrooms are tender.

4. Stir the broth, thyme, black pepper and carrots into the saucepot. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the carrots are tender. Stir in the barley.

TIP: Substitute 1/2-cup quick-cooking barley for the pearl barley. Cook for 12 minutes (or according to the package directions) or until the barley is tender.


Sensational Chicken Noodle Soup

Prep: 5 minutes
Makes: 4 servings
Cook: 25 minutes

Ingredients

4 cups Swanson Chicken Broth (regular, Natural Goodness or Certified Organic)
Generous dash ground black pepper
1 medium carrot, sliced (about 1/2 cup)
1 stalk celery, sliced (about 1/2 cup)
1/2 cup uncooked extra wide egg noodles
1 cup shredded cooked chicken or turkey


Directions

1. Heat the broth, pepper, carrot and celery in a 2-quart saucepan over medium-high heat to a boil.

2. Stir the noodles and chicken into the saucepan. Reduce the heat to medium. Cook for 10 minutes or until the noodles are tender.

Asian Soup: Add 2 green onions cut into 1/2-inch pieces, 1 clove garlic, minced, 1 teaspoon ground ginger and 2 teaspoons soy sauce. Substitute uncooked curly Asian noodles for egg noodles.

Mexican Soup: Add 1/2 cup Pace Chunky Salsa, 1 clove garlic, minced, 1 cup rinsed and drained black beans and 1/2 teaspoon chili powder. Substitute 2 corn tortillas (4 or 6-inch) cut into thin strips for the noodles, adding them just before serving.

Italian Tortellini Soup: Add 1 can (about 14 1/2 ounces) diced tomatoes, drained, 1 clove garlic, minced, 1 teaspoon dried Italian seasoning, crushed and 1 cup spinach leaves. Substitute 1/2 cup frozen cheese tortellini for egg noodles. Serve with grated Parmesan cheese.

Simply Delicious Coconut Rice Recipe


This is a super simple recipe for delicious coconut rice that will add a bit of flair to any meal and have your friends in awe when throwing a dinner party. Everyone always thinks it takes hours to prepare... when it's more like a matter of minutes from skillet to plate.

Ingredients:
1 cup Jasmine rice
Water
Coconut milk
½ tsp vanilla extract
Salt
Pinch of sugar

Directions:
Add all ingredients and bring the water to a boil once the liquid is absorbed the rice is down. Then lightly brown the coconut. When rice is done pour in to bowl and add the coconut and almonds if you wish.

Mung Daal Recipe


Mung Daal is an Indian split bean dish which is as delicious as it is comforting. It is loaded with protein...perfect for vegetarians! Enjoy this daal with rice or chapatti.

Ingredients:
½ cup mung daal
2 cup water
Pinch salt
¼ tsp turmeric powder
1 tbsp oil
½ tsp mustard seeds
Pinch asafoetida
½ piece ginger
1 sprig curry leaves
Green chilies
1 tbsp lemon/lime juice
1 sprig cilantro

Directions:
In a pressure cooker add water, mung daal, turmeric, and salt set on medium heat. After one whistle go head and take it off the stove. Now place a pan on med heat and pour the oil in to it along with cumin seeds, asafoetida, curry leaves, and green chilies. Add the garlic and tomatoes and stir a little bit. Then add it to the mix you made earlier and add a little lemon juice. Then stir it all together.

Kosambri (Shredded Carrot Salad) Recipe


This recipe for Kosambri or Shredded Carrot Salad most probably originated in the southern parts of India but has been adapted all over. The natural sweetness of carrots mixed in with the tanginess of the lemon juice makes Kosambri one of the tastiest ways to eat raw carrots. Ingredients:
3 cups finely shredded Carrot
3 tbsp lemon/lime juice
Salt
1 Tsp oil
1 Tsp mustard seeds
Pinch asafoetida
1 tsp Chana daal
1 tsp Urad daal
Green chilies
1 sprig curry leaves
5 sprigs cilantro
Fresh shredded coconut

Directions:
With all the carrots in a bowl add the lemon juice, salt and cilantro then mix well. Next place a small pan on med heat and add oil, mustered seeds, chana daal, urad daal, green chilies. Turn off the heat and add the curry then pour in to the carrots and stir. Put in the fridge and let chill for a few hours. Once chilled add some coconut if you like.

Tapioca Pudding Recipe

Ingredients:
½ cup small pearl tapioca
2 cups cold water
3 cups milk
½ cup sugar
2 beaten eggs
1 tsp of vanilla extract

Directions:
Pour the tapioca in to a small bowl and add the water let set over night in the fridge.

The next day drain the water and add to a saucepan along with milk, sugar, and eggs. Cook on a med heat stirring frequently for 15-20 minuets when it’s thick, take it off the heat add vanilla.

Blueberry Ice Cream Recipe

Blue berries
Vanilla seeds
2 cups Heavy cream
¾ cup sugar
Milk

Directions:
In a large mixing bowl pour in the cream, sugar and the vanilla seeds and mix well to dissolve the sugar. Now add the milk and carefully pure the mixture in to the ice cream machine and let set for 35-40 min when it thickens up add the blueberry in it and let it go a little longer then place in the freezer for roughly 2 hours to freeze.

Easy Chickpea Salad Recipe


Simple but delicious salad with chickpeas, lemon juice, olive oil and veggies.

Ingredients:
19 oz can of chickpea
1 cucumber chopped
2 Chopped tomatoes
2 Chopped radish
Juice from 1 lemon
1 chopped garlic clove
1 tbsp olive oil

Directions:
In a large mixing bowl add the chickpeas, cucumber, tomatoes, radishes, and garlic and mix well. Now add the olive oil and add some ground pepper and let chili to enhance the taste.
