Winning Game Day Recipes that are Both Delicious and Healthy

When it comes to sports get-togethers, enthusiasm for the food is often rivaled only by that for the game itself. If you’re hosting a party for a bowl game or other event, put together a winning game plan that features a selection of delicious, healthy foods rather than the typical menu of high-fat, high-calorie foods and beer.

OK, so maybe you'll want to stick with the beer, but there are plenty of nutritious options for the rest of your menu that allow your armchair quarterbacks to satisfy their munchies without fumbling away their health.

Keep your snack options healthy by offering bowls of pretzels instead of potato chips, popcorn instead of candy, and wedges of flatbread with garlic hummus or whole-wheat crackers and this delicious hot spinach dip instead of your usual chips:

Spinach Crock-Pot Dip

Ingredients:

2 cups cooked spinach
2 cups shredded Swiss cheese
1 cup low-fat milk
1 packet Simply Organic Zesty Herb Marinade Mix


Directions:

Mix all ingredients together in a crock-pot. Turn on high until cheese is melted, about 20 minutes, then turn to low.

If you don’t have a favorite chili recipe, here's one that's particularly zesty and healthy:


Vegetarian Tex-Mex Chili

Preparation time: 10 minutes
Cooking time: 35 minutes

Ingredients:

1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
3 3/4 cups Italian-style peeled tomatoes, chopped, with juice reserved
1/2 cup vegetable stock or water
1/4 cup chili powder, more if desired
1 tablespoon cornmeal
2 teaspoons sugar
1 teaspoon ground cumin seed
1/4 teaspoon ground cayenne, more if desired
1/4 teaspoon black pepper
sea salt, to taste
1 16-ounce can black beans, rinsed and drained
10 ounces frozen corn, thawed
1 jalapeño pepper (canned or fresh), seeded and chopped (be sure to wear rubber gloves when handling!)
1/2 cup cilantro, chopped

Directions:

Heat oil in a heavy saucepan over medium heat. Sauté onion and garlic 5 minutes or until softened. Add next 8 ingredients and salt to taste. Increase heat to high and bring to a boil. Immediately reduce heat to medium low and simmer 15 minutes. Add beans and corn and simmer another 20 to 30 minutes, adding additional stock or water if chili becomes too thick. Bring those baked tortilla chips into play for the second half or the second game. Serve alongside a bowl of homemade salsa using this easy-to-prepare recipe:



Instant Salsa

Ingredients:

1 package Simply Organic Spicy Guacamole Dip Mix
3 large, ripe, diced tomatoes (enough for 2 cups)


Directions:

Combine the dip mix with the diced tomatoes and refrigerate for at least two hours before serving. For milder heat, use more tomatoes.


To satisfy those with a sweet tooth -- and to provide something cool to counteract the heat of all the hot dishes -- offer a big bowl of fresh fruit salad. A mix of melons, strawberries, blueberries, pineapple, and other favorite fruits makes a colorful selection that guests will come to time and time again. Zesty 10 Minute Chili Recipe

Prep Time: 2 minutes
Cooking Time: 8 minutes
Servings: 4

Ingredients
1/3 lb. lean (90%) ground beef
2 Tbsp. chili powder
1 can (14.5 oz.) Del Monte® Chunky Diced Tomatoes (Zesty Chili Style)
1 can (8 oz.) Del Monte® Tomato Sauce
1 can (15 oz.) kidney beans, drained and rinsed

Directions

  1. Brown meat with chili powder in large skillet; drain
  2. Add tomatoes, sauce and beans
  3. Cook over medium heat for 5 minutes

Chicken Chilli Recipe

Texas Easy Chili Recipe

Texas Easy Chili is a chili powder and tomato juice based sauce combined with cubed or ground beef. Chili originated in Texas in the 1800s. There are many variations of chili. This version does not contain beans.

Ingredients:

  • 3 pounds chuck roast or ground beef, cubed or formed into small meatballs
  • 2 tablespoons oil
  • 2 cloves of garlic, minced
  • 6 tablespoons chili powder
  • 5 tablespoons flour
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 3 cups tomato juice or V8
  • 3 beef bullion cubes
  • salt and black pepper to taste
  • Garnish - lime wedges and sour cream

Makes 6 cups of chili.

Directions:

  • Cut chuck roast into bite-size pieces or form ground beef into small meatballs (1 inch - 25mm in size).
  • Fry beef in cooking oil until outside is browned.
  • Add minced garlic and cook for two minutes.
  • Combine chili powder, flour, oregano and cumin in bowl and mix well. Sprinkle mixture over cooking beef and stir until beef is well coated with spice mixture. Cook for 1 minute.
  • Add tomato juice and bullion cubes. Stir for about 15 seconds.
  • Simmer for 45 minutes, stirring occasionally.
  • Remove from heat and add salt and black pepper to taste.

Notes, tips and variations:

  • Cool and refrigerate overnight to develop flavors. (If you can wait, if not, enjoy.)
  • Heat and serve in bowls with 1 tablespoon of lime juice and 1 tablespoon of sour cream added to top.
  • Serve with cornbread or sourdough bread.
  • For a cool treat, spoon a tablespoon of Ranch Dressing on top of your chili, along with some cheese!

20 Minute Turkey Chili Recipe
