Cabbage Chana Dal Salad Recipe



Ingredients:
2 cups of very finely chopped cabbage
2 medium seeded and finely chopped tomatoes
1 cup chopped cucumber
1 shredded carrot
10 minced mint leaves
1/4 cup yellow chana dal(chana dal is the split version of kala chana,can be purchased from any Indian grocery store)

Salad Dressing:
1 tablespoon olive oil
1 tablespoon vinegar
1 tablespoon lemon juice
1 tablespoon ginger juice
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper

Kosambri (Shredded Carrot Salad) Recipe


This recipe for Kosambri or Shredded Carrot Salad most probably originated in the southern parts of India but has been adapted all over. The natural sweetness of carrots mixed in with the tanginess of the lemon juice makes Kosambri one of the tastiest ways to eat raw carrots. Try this recipe and enjoy the health benefits of carrots - an A+ vegetable!

Ingredients:
3 cups finely shredded Carrot
3 tbsp lemon/lime juice
Salt
1 Tsp oil
1 Tsp mustard seeds
Pinch asafoetida
1 tsp Chana daal
1 tsp Urad daal
Green chilies
1 sprig curry leaves
5 sprigs cilantro
Fresh shredded coconut

Directions:
With all the carrots in a bowl add the lemon juice, salt and cilantro then mix well. Next place a small pan on med heat and add oil, mustered seeds, chana daal, urad daal, green chilies. Turn off the heat and add the curry then pour in to the carrots and stir. Put in the fridge and let chill for a few hours. Once chilled add some coconut if you like.

Easy Chickpea Salad Recipe


Simple but delicious salad with chickpeas, lemon juice, olive oil and veggies.

Ingredients:
19 oz can of chickpea
1 cucumber chopped
2 Chopped tomatoes
2 Chopped radish
Juice from 1 lemon
1 chopped garlic clove
1 tbsp olive oil

Directions:
In a large mixing bowl add the chickpeas, cucumber, tomatoes, radishes, and garlic and mix well. Now add the olive oil and add some ground pepper and let chili to enhance the taste.

Turkey Waldorf Salad Recipe


Leftover turkey? Here's a fast and easy recipe for the day after Christmas.

Ingredients:
1/2 cup of plain yogurt
3 table spoons of hellmans manase
3 table spoons of sider viniger
1 table spoon of sugar
an 8th of a teaspoon of ground black peper
2 cups of cooked pasta
2 cups of shreded or diced turky
2 cups of sliced celary
2 cups of unpealed apples

Directions:
Blend all ingredients together.

Tomato Salad with Basil and Feta is a delicious side dish and great to take-along to a party or gathering. With a loaf of crusty French bread it's a fresh and summery meal. It's beautiful and yummy.

Tomatoes contain lycopene, often connected to reduced incidence of prostate cancer. Tomatoes also contain vitamin C, potassium and folate.

In this video Rita also talks about different types of basil, oregano and thyme.

A bit different than a traditional Caprese salad, this tomato salad uses feta to give it a kick.

Rita also uses her "once a week" vinaigrette -- a staple at her house on salads of any kind.

Bean Salad Recipe


Bean salad is a great way to get the health benefits from beans -- protein and they're power to "pull" cholesterol out of your body.

This salad can be made with any type of bean. In this video, Rita uses Chick Peas, Kidney beans and red beans, but you could use any type. Black beans, white beans or red.

This simple salad gets some crunch from celery and chopped bell pepper, roasted corn as well as a few green onions. Rita always talks about "Cooking by Color". A great way to get veggies in to your diet.

And of course this video is full of kitchen tips to make your trip to the kitchen even easier.

Lightly seasoned with Cumin and Chili powder, this bean salad has a great southwestern flair. Alight vinaigrette finishes off this delicious bean salad.

Broccoli Salad Recipe


Broccoli Salad recipes are delicious and can be nutritious. A real "super food" broccoli is chock full of nutrition, antioxidants and flavor. This recipe is also an easy way to get more vegetables in your diet.

I've got to admit, the dressing isn't too healthy - but it is delicious. Try no-fat mayo, light cheese and leave out the bacon for a more healthy option.

You can make this salad with raw broccoli or blanch it a bit to hold the color and soften the florets. If you don't like raw broccoli blanch the broccoli for 1 minute or so. But be careful to not leave the broccoli in the water too long.

This recipe pairs broccoli, bacon and a dressing to make a sweet and sour salad that's a great side dish or meal all on its own.
